Raspberry and Oat Squares

These are absolutely delicious. I made a batch of them last Friday and by Friday evening they had disappeared. Great for the kids went you hear the ‘Mum I am hungry!!’. Ideal for lunch boxes. Watch portion sizes for weight control. Healthyhabitsmadeeasy

Ingredients:

240g oats

240ml of full fat milk

1 medium banana

90g raspberries

2 eggs

40g honey or brown sugar

11/2 tsp baking powder

1 1/2 tsp cinnamon

1 tsp vanilla extract

15g of milled flaxseed

Method:

  • Preheat the oven to 175oc/350F/Gas mark 4
  • Basically mix all the ingredients together in large a bowl
  • Pour into a lined or greased baking tin 33 x 23 x 5cm
  • Bake until golden on top, oats are cooked and a knife comes out clean.
  • Cool on a wire tray, cut into squares and keep fresh in a covered contain
