Black Bean Brownies – all chocolate and no guilt!

You’d never guess these rich, velvety, flourless chocolate treats are made with pureed black beans!  Adam, my 16 year old devoured them.  I told him afterwards what they were made from and he didn’t flinch! He said all he tasted was chocolate.  I love when you go out of the way to try new recipe that is really healthy and it’s a hit….well one teenager converted…two to go….  Another option would be to swap the beans for cooked mashed sweet potato.  I have to try this version.  I will post up when I do.   On the nutrition front these brownies are packed full of fibre, protein, iron and magnesium – all energy boosting nutrients.

 

flourless brownies

Ingredients:

1 large egg
1 (15 oz) can low sodium black beans, rinsed and drained
1/2 large ripe avocado
1 tablespoon vanilla extract
¾ cup coconut sugar
2/3 cup unsweetened cocoa powder or raw cacao
1 teaspoon coconut oil
1 teaspoon baking powder
1/3 cup chocolate chips
Instructions:
  1. Preheat oven to 350 degrees. Spray an 8×8” baking pan with nonstick coconut oil spray.
  2. In a high-speed blender or food processor, combine egg, black beans, avocado, vanilla, coconut sugar, cocoa powder, coconut oil and baking powder.
  3. Mix until a soft batter forms. Fold in chocolate chips. Pour batter into prepared pan.
  4. Bake for 25-30 minutes, or until the centre of the brownies is set. Cool completely before slicing and serving.
