Good to mix up your breakfast if you are relying on smoothies, egg based breakfasts or oats. This granola is loaded with all the healthy fats, fibre, very low is sugar, gluten free and so easy to make. Not just for breakfast but great with natural yoghurt and fruit. I have popped a small container of it into my handbag for when I am out and about for a healthy snack.

1 Vanilla pod
3 T Olive oil
2 T Water
Pinch Cinnamon
80ml Maple Syrup.
100g dessicated coconut
Pinch salt
1 Egg white
150g Pumpkin seeds
200g Cashew Nuts
200g Walnuts.

Set oven at 150 degrees F

Seeds into food processor and gently blitz until coarse not fine
Mix the rest of the ingredients together abd add to nut mixture.
Spread onto a baking tray lined with parchment paper. 30 mins in oven.
Stir mixture every so often to prevent it burning at the bottom
