Hormone Boosting Kale, Beet and Carrot Salad

Raw carrots help balance women’s hormones and improve gut health. Raw beets are perfect to eat shredded and boost your liver function, boost energy levels and aid digestion. Studies show that cruciferous vegetables which include kale contain cancer-fighting compounds and can reduce inflammation, regulate blood sugar, promote weight loss, enhance heart health and help balance oestrogen levels.

The salad:-

1/2 cup carrot, shredded

1/4 cup sunflower seeds

1 cup beets, shredded

1 cup kale, chopped

1/2 cup cooked canned chickpeas, rinsed

The  Dressing:-

Juice of one lime

1 tsp raw honey •

1 tbsp olive oil •

1 tsp garlic, chopped •

1 tsp fresh ginger, grated

Black pepper to taste

Instructions

Combine the carrots, sunflower seeds, beets, kale, and chickpeas in a bowl. Put all of the dressing ingredients in a small bowl or jar and whisk until smooth. Pour dressing on the mixed veggies and toss to mix. Make ahead of time as the flavour will develop after it sits for a few hours. Perfect for the following day to bring for lunch or have as a side with dinner to boost your veggie intake.

Ideas

Use different kinds of kale. Kale has become the darling vegetable of the nutrition world. It is part of the Brassica group, which includes other cruciferous vegetables such as cabbages, cauliflower, Brussels sprouts and broccoli.

Sprinkle nuts on top. I love the shape, taste, and texture of the raw slivered almonds, but walnuts, pecans, or hazelnuts would lend some outstanding crunch to your salad!

Add some kind of cheese – a nice bleu cheese like gorgonzola or even a feta would taste great or shavings of Parmesan.
